QUICK GULAB JAMUNS


Gulab jamuns ,the most famous Indian sweet. This gulab jamun is made of bread!!! I must tell you this  jamuns is as delicious as that of  one made from khova or milk powder. Lets try this and enjoy your Diwali..Happy Diwali to all my friends…

Ingredients
1.      Bread-6 slices, sides removed
2.      Milk-1/2 cup
3.      Maida-1tbsp
4.      Sugar-1cup
5.      Water-1 cup
6.      Cardamom-2nos
7.      Rose essence- 1 or 2 drops (optional)
8.      Oil for frying

Method of preparation
1.      Dip bread in milk .Squeeze it out to remove excess liquid. Add maida. Knead into smooth dough. Make small balls out of it.
2.      Heat oil in a deep bottomed pan. Fry jamuns till golden brown in low flame. Mean while mix sugar with water. Add cardamom and rose syrup. Heat till the sugar melts and the fluid thickens. Keep in low flame until we finish frying of all jamuns.(the syrup should be hot while putting the jamuns)
3.      Transfer the fried jamuns into the hot sugar syrup. Cover the vessel. Let it soak in syrup fo2 hours.

Notes : The jamuns should be fried in low heat. If the outer layer turn crispy it may not absorb sugar syrup. If the syrup solidify when it cools down, add some more water and heat again.

PEANUT LADOO-NAVARATHRI SPECIAL



Ingredients
1.      Peanut- 1 cup
2.      Sugar-1/2 cup
3.      Cardamom-3 nos
4.       Warm Ghee-2tbsp

Method of preparation
1.      Roast the peanuts(without adding any oil) until small black spots appear over it.
2.      Transfer this on to a kitchen towel. Shape the towel in to bag.rub with your hands .the skin will come off easily. Blow away the skin in to the trash. This is the easiest way to peel off peanuts.
3.      Remove the skin of cardamom. Take the seeds out.
4.      Powder cardamom seeds along with sugar. Keep it aside.
5.      Grind the peanuts.(this will look like crumbled biscuit),while grinding it should not turn pasty.
6.      Mix all the ingredients. Shape this into small balls.

DATES-SEMIYA PAYASAM


DATES-SEMIYA PAYASAM
Lets celebrate this last day of onam with this simple yet delicious payasam…..
Ingredients
1.      Roasted semiya-1 ½ cup
2.      Dates- 12 nos( deseeded)
3.      Milk-1 ½ litre
4.      Sugar-15 tbsp
5.      Cardamom-4nos
6.      Ghee-3tbsp
Method of preparation
1.      Soak dates in ¾ cup of milk for 30 min.then grind this into a smooth paste
2.      Peel off cardamom ,take out seeds grind with 2 tbsp of sugar to a fine powder.keep it aside.
3.      Heat 1 tbsp of ghee in a  thick bottomed vessel.add vermicelli stir for a minute.add half of milk let it boil,reduce the flame and cook until semiya becomes soft.
4.      When the semiya get cooked add sugar mix well.stir for 10 min.
5.      Add remaining milk,dates paste.mix well.let it boil.
6.      Switch off the flame.add cardamom powder.give a stir.
7.      In another pan heat 2 tbsp of ghee,fry chopped dates and kismis .add this into the payasam ..serve hot..
