I never knew appam can be made without
coconut and the boring process of “kappi kachal”. When my friend Rose mary
shared this recipe I wanted to give it a try and to my surprise it turned out
beautifully. Thank you dear for this super recipe.
Ingredients
1.
Raw rice(pachari)-2glass
2.
Urad dal-1tbsp
3.
Potato-half of 1 medium sized (cubed)
4.
Cooked rice-1 hand full or aval(rice
flakes) soaked in water for 30 minutes
5.
Sugar-2tbsp
6.
Yeast-1/2tsp
7.
Water
8.
Salt
Method of preparation
1.
Wash rice and urad dal three times.
Soak both together for 3-4 hours.
2.
Grind all the ingredients except
salt, in to a smooth batter by adding enough water. Keep it over night for fermentation.
3.
When it is fermented, add salt and
mix well. Heat a appachatty.Pour a ladle full of batter. Gently swirl the pan in
order to spread the batter. Close with a lid. Let it cook in medium flame. When
it is cooked the sides will get detached from the pan easily. Serve hot with
stew ,kadala curry ..

DeleteI was sure that the caterers for our baptism parties did not use coconut in their appam and I was searching for such a recipe. Most we're just modified Dosas. But when I got married in 1978, someone gave me a recipe book with a similar recipe and I had always wanted to try it but didn't because I could not take a chance with breakfast rush.

ReplyDeleteI tried it and got a little confused with the measurements. Still it came out well. But it tasted like pathiri as the coconut taste is missing. Adding coconut milk powder may add to the flavour.

Deletethanks for visiting my blog. to be very honest i never have added cows milk in appam.but i know many people makes appam with cows milk.add it once the batter is fermented that is as u said on the next day.but one thing you should be really careful about the consistency of the batter.so add water accordingly while grinding.or else batter may get thin while adding milk on the next day.hope this helps .Happy cooking :)
Rani, i tried the recipe yesterday without any milk. It fermented so good that i made appams yesterday itself(It took only 3 hours for the batter to rise three times in volume). And the appams, they were super soft.
