Fruits are one thing which iam not interested in, particularly bananas. Once it gets dark spots poor bananas find its space in trash. But that was an old story. After making this banana bread iam waiting my banana to get spots  :).This banana bread is totally addictive. One can’t stop eating just a piece. It almost taste like ‘unniyappom’. Above all you don’t feel guilty while having an extra piece since it is made with healthy ingredients. The bread is soft and moist. It was as delicious as I was eating it continuously. It was hard for me to keep few pieces even for my Husband :).The whole loaf was finished within few hours. Do try this healthy delicious bread. It might satisfy even the banana haters!!

1.      Whole wheat  or Atta-1.5 cup
2.       Grated Jaggery or sugar-1/2 cup
3.      Ripe banana mashed-1 cup,(I used robusta variety, around 3 or 4 medium sized can yield 1 cup)
4.      Baking soda-1/2tsp
5.      Baking powder-1 n 1/2tsp
6.      Oil-3/4cup
7.      Cinnamon powder-1tsp
8.      Vanilla essence-1tsp

Method of preparation

1.      Preheat an oven at 180◦ c For 10 minutes. Prepare a loaf tin and keep it ready
2.      Mash bananas using a fork or mixie without any lumps.(use over ripened bananas).
3.      Mix wheat, baking powder, baking soda and cinnamon powder using a whisk or swift all the dry ingredients.
4.      In a mixing bowl mix oil, vanilla and jaggery well.(Jaggery may tend to form clumps with oil. Do not worry, go head. It will dissolve upon adding flour).Add all the dry ingredients little by little and mix to incorporate everything. Do not over mix as it will make cake dense.
5.      Now bake at 180◦ for 50 minutes or until the inserted toothpick comes out clean.
6.      Allow it to cool .Slice and serve.

Garlic bread is everyone’s favorite. It is such a comfort food that I love to have it anytime. Many restaurants serve this as a starter.I feel the one from Domino's or Pizza hut tastes best. This is my humble attempt to recreate Domino's style garlic bread. Luckily it came out pretty well.
It is easy to make and the aroma of homemade bread is heavenly. Do try. Everyone would love this…

For the bread dough

1.      Maida-2 n ½ cups
2.      Yeast-2 n ½ tsp
3.      Sugar -tbsp
4.      Salt-3/4tsp
5.      Luke warm water-1/4 cup + required to knead the dough(I didn’t measure it)
6.      Oil-1tbsp

With this measurement 4 medium sized garlic breads can be made. Below mention the filling for per bread.
1.      Butter-1tbsp or more
2.      Garlic-3 or 4 pods
3.      Cheese grated-1 or 2 tbsp
4.      Salt-a pinch
5.      Oregano- 1/2tsp

Method of preparation

1.      Mix yeast, lukewarm water and sugar. Keep it aside for 15 minutes for proofing.
2.      Mix flour, salt and oil in another bowl. Add proofed yeast into this and give a nice mix. Now add lukewarm water little by little and knead into smooth dough. It should be kneaded for minimum of 8 minutes.( the dough consistency is to be like chappathi dough).Keep the bowl closed for 2-3 hours .
3.      Once the dough doubles in size, Punch it  to release the air. Transfer it onto a floured work space. Take a big ball out of it and flatten into thick bread (almost 0.5 cm thickness) using rolling pin.
4.      Heat a pan. Melt butter ,add crushed garlic pods and salt into this. Give a stir. Switch off the flame. Let it cool a bit. Smear this garlic butter mixture over the flattened dough. Spread grated cheese over and fold.Slighlty press to seal the edges.
5.      Transfer this on to greased baking tray. Now  cut the folded dough into strips. While making each cut dip the knife in cold water so that the dough will not stick to it
6.      Smear the remaining garlic butter mixture over the top. Sprinkle oregano. Keep it aside for 15 minutes for second rise. By this time preheat the oven at 250 for 10 -15 minutes.

7.      After the preheating reduce the temperature to 200and bake the bread for 15 minutes or until it cooks through. Mine took 15 minutes and I kept it 3 more minutes with only the upper heater on to get the top portion brown color.

8.      Once it has cooked take out from the oven, apply some more butter and serve hot..

I have used the same recipe of lemon cup cakes  for making this cake.As already mentioned this one is super easy ,delicious and perfect for this summer as anything lemony is truly refreshing.

1.      Maida-1 cup
2.      Sugar-less than ¾ cup
3.      Oil-1/4 cup(use any unflavoured oil)
4.      Baking powder-1tsp
5.      Baking soda-1tsp
6.      Milk-1/2 cup
7.      Lemon juice-1tbsp
8.      Lemon zest- zest of two small lemons (it was around 1 tbsp or more)
9.      Lemon yellow color-tad a bit (it is purely optional)

Method of preparation

1.      Preheat oven at 180 degree for 10 minutes.
2.      Prepare an 8” inch cake tin.
3.      Take a bowl.mix all ingredients except flour and stir till the sugar dissolves.
4.      Add the flour in two batches and give a nice stir without any lumps.
5.      Pour in to prepared tin and bake for 30 minutes at 180degree or till the inserted knife comes out clean or cook this in a pressure cooker for about 45 minutes.

Notes: lemon zest is lemon peel. It can be taken by grating the skin .Be careful not to include the white inner part while grating as it would taste bitter.

When I went to supermarket yesterday for our weekend purchase, I saw an attractive packet pictured a beautiful cake named pressure  cooker cake mix. Then I wondered is there any particular cake recipe that to be made in pressure cooker???My answer is absolutely NO!!Before I get my electric oven I used to make different kinds of cakes in cooker. I could not find any taste or texture difference .When I googled about pressure cooker baking,I could see many posts about this using sand and some  using crystal salt to maintain or to control the heat inside the cooker. You don’t need any of these stuffs for making a humble cake. You just require 3 things, a pressure cooker WITHOUT RUBBER GASKETAND WEIGHT ,a cooker separator and a cake tin that fits well inside the cooker.iam promising you that your cooker will not explode or damage in any way(before that instructions should be read thoroughly). You don’t have to follow any particular recipe for making cakes in cooker.Any type of cakes can be made in cooker .But if you are novice in baking start with an easy recipe. This post is for all who desperately want to bake a cake without using oven.
Coming to the cake recipe..This is a fool proof recipe. I have made this cake number of times and every time it was a hit. This is a super easy and a delicious cake..

1.      All purpose flour(maida)-3/4cup
2.      Curd-1/2 cup(room temperature)
3.      Oil-1/4cup(any flavorless oil like sunflower or canola)
4.      Sugar-1/2cup
5.      Baking powder-little less than ¾ tsp
6.      Baking soda-1/4 tsp
7.      Vanilla essence -1tsp
8.      Cocoa powder-2 n ½ tsp
9.      water-2tsp

Method of preparation

1.      Prepared a cake tin. For that, apply oil or butter along the sides and bottom of the tin. Sprinkle little flour all over. Invert the pan and tap to remove excess flour
2.      Take a bowl. Start by beating curd well.Add in baking powder and baking soda. Beat well. When the curd turns frothy add oil and essence and sugar. Beat well till sugar dissolves. Add flour in 2 batches and mix well without any lumps.
3.      Mix cocoa powder with water to form a paste. Add a ladle full of prepared batter in to this and mix well.this is the chocolate batter.
4.      Pour the white batter into the tin. Take a spoon full  ofchocolate batter and pour on the top of this. Using the tip of a pointed knife make some designs. Repeat this until both batter used up.
5.      Now take the cooker, keep the cooker separator. DO NOT POUR WATER OR OIL. The cake is going to cook under dry heat the same way  which is cooked up in oven. Close with the lid.         DO NOT PUT RUBBER GASKET AND WEIGHT. Keep in high flame for 2 minutes, then in medium flame for 5 minutes then reduce the flame to lower and cook for 40-45 minutes.Check in between by inserting a tooth pick or knife. Once it has cooked the knife comes out clean.
6.      When the cake is cooked, remove the cake tin from the cooker. Let it cool completely. Run a knife all along the edges the pan .Invert the pan on to plate and tap the bottom of the pan to get the cake out.Slice and serve
