INSTANT BADAM MILK USING HOME MADE KESAR BADAM MIX



How about having a glass full of goodness? I would call this badam milk a super drink. Yes, look at those ingredients, all are claimed to be the most nutritious things on this earth! Just mix a spoonful of this powder in a glass of milk and feed your kids, there is nothing better than this. delicious, healthy and vitamin rich drink.

There are lots of brands of badam mix are available in the market. But have you ever taken a look at those ingredients listed on that packets. If not please do read it before buying.It contains very less percentage of almond and a huge numbers of artificial preservatives and flavorings.so next time rather buying a ready mix get some almonds and make your own within minutes.here goes the recipe.it is super simple and easy.   KESAR BADAM MIX

Ingredients

1.     Almonds- 20
2.     Saffron-  a pinch
3.     Cardamom-  1, skin removed
4.     Sugar- 1 or 2 tbsp.
5.     Turmeric powder- a good pinch

Method of preparation

Dry roast the almonds in a pan for a minute. Put all ingredients in a blender and grind in to fine powder. While grinding stop the mixer in between ,scrape it from the sides and pound again to ensure uniform mixing. With this measurement around 3 glasses of badam milk can be made.
Store this in an airtight container and use within one month.

INSTANT BADAM MILK

Ingredients

Milk- 1 glass
2.     Badam mix- 1 heaped spoon

Method of preparation

Boil milk. Add the powder and mix well. Serve warm or chilled. Sugar is not needed as it is already added.

JAM ROLLS



Jam roll was in my to do list for long time. But the thought of getting it right made me stayed away from it. But once I made this, I realized how simple and fun rolling a sheet of cake.jam rolls are my brothers favorite. He buys this on every bakery purchase. Definitely anything sweet is my favorite too :)
For making this, very few ingredients are needed.Success of the recipe totally lies on the beating of eggs.So make sure you beat the eggs till fluffy.When I googled I could see lots of recipes which doesn’t call for any leavening agent but I was bit skeptical about the result.So I chose this recipe which uses baking powder.Anyway i am glad that I got it the way I expected it to be..

Ingredients

1.      Maida or All purpose flour-3/4 cup
2.      Eggs-3nos
3.      Sugar-1 cup
4.      Baking powder-1tsp
5.      Salt-1/4tsp
6.      Vanilla essence-1tsp
7.      Water-60ml
8.      Powdered sugar- around ¼ cup
9.      Jam-100gm

Method of preparation

1.      Preheat the oven at 200◦line a baking tray with foil paper or butter paper. Grease with oil or butter sprinkle flour all over .invert the pan and tap to remove excess flour.
2.      In a bowl beat eggs for 5 minutes until thick and fluffy. Add in sugar and beat again. Add water and vanilla essence and give a gentle mix. Now add the flour, baking soda and salt. Gently fold in.
3.      Pour into the prepared baking tray. Bake at 200◦ for 10-12 minutes or until the inserted tooth pick comes clean.
4.      Mean time, keep a clean cloth ready. Spread it on a table or kitchen top. Sprinkle powdered sugar over this with the size of the cake.
5.      Once the cake is cooked, loosen the sides of the cake from the pan and carefully invert the tray over the cloth sprinkled with powdered sugar. Then remove the foil carefully.
6.      Beat jam with a whisk or a fork to loosen it. Then apply this all over the cake .Gently roll the cake along with the cloth. Keep it tightly wrapped for 10 minutes. Then remove the cloth .A log of jam roll is ready. Slice and serve..

EASY MARBLE CAKE (EGGLESS) AND HOW TO MAKE CAKE IN PRESSURE COOKER WITH STEP BY STEP PICTURES




When I went to supermarket yesterday for our weekend purchase, I saw an attractive packet pictured a beautiful cake named pressure  cooker cake mix. Then I wondered is there any particular cake recipe that to be made in pressure cooker???My answer is absolutely NO!!Before I get my electric oven I used to make different kinds of cakes in cooker. I could not find any taste or texture difference .When I googled about pressure cooker baking,I could see many posts about this using sand and some  using crystal salt to maintain or to control the heat inside the cooker.You don’t need any of these stuffs for making a humble cake. You just require 3 things, a pressure cooker WITHOUT RUBBER GASKETAND WEIGHT ,a cooker separator and a cake tin that fits well inside the cooker.iam promising you that your cooker will not explode or damage in any way(before that instructions should be read thoroughly). You don’t have to follow any particular recipe for making cakes in cooker.Any type of cakes can be made in cooker .But if you are novice in baking start with an easy recipe. This post is for all who desperately want to bake a cake without using oven.
Coming to the cake recipe..This is a fool proof recipe. I have made this cake number of times and every time it was a hit. This is a super easy and a delicious cake..

Ingredients

1.      All purpose flour(maida)-3/4cup
2.      Curd-1/2 cup(room temperature)
3.      Oil-1/4cup(any flavorless oil like sunflower or canola)
4.      Sugar-1/2cup
5.      Baking powder-little less than ¾ tsp
6.      Baking soda-1/4 tsp
7.      Vanilla essence -1tsp
8.      Cocoa powder-2 n ½ tsp
9.      water-2tsp

Method of preparation

1.      Prepared a cake tin. For that, apply oil or butter along the sides and bottom of the tin. Sprinkle little flour all over. Invert the pan and tap to remove excess flour
2.      Take a bowl. Start by beating curd well.Add in baking powder and baking soda. Beat well. When the curd turns frothy add oil and essence and sugar. Beat well till sugar dissolves. Add flour in 2 batches and mix well without any lumps.
3.      Mix cocoa powder with water to form a paste. Add a ladle full of prepared batter in to this and mix well.this is the chocolate batter.
4.      Pour the white batter into the tin. Take a spoon full  ofchocolate batter and pour on the top of this. Using the tip of a pointed knife make some designs. Repeat this until both batter used up.
5.      Now take the cooker, keep the cooker separator. DO NOT POUR WATER OR OIL. The cake is going to cook under dry heat the same way  which is cooked up in oven. Close with the lid.         DO NOT PUT RUBBER GASKET AND WEIGHT. Keep in high flame for 2 minutes,then in medium flame for 5 minutes then reduce the flame to lower and cook for 40-45 minutes.Check in between by inserting a tooth pick or knife. Once it has cooked the knife comes out clean.
6.      When the cake is cooked, remove the cake tin from the cooker. Let it cool completely. Run a knife all along the edges the pan .Invert the pan on to plate and tap the bottom of the pan to get the cake out.Slice and serve

EASY LEMON CUP CAKES (NO EGGS NO BUTTER !!!)




How fast the time flies!!! Its been one year since I posted something in my blog.My blog was kept unnoticed for long time.I apologize my fellow bloggers for not visiting and commenting on their blogs. 

 Motherhood changed my life drastically.My little man is now 9 months old. Imagine how tough it is looking after a naughty baby boy. I find it really hard to spend much time on cooking.But once  I opened my blog account I did find fairly good number of page views.Then I badly wanted to restart my blog. I wish this post be a sweet one as this is my first post after my Kannan born.This is for him.I started cooking this after making him sleep .But just after measuring all the ingredients he woke up.So the rest I completed by holding him in my hands.I was struggling to get hold of muffin cups which he tried to snatch from me:)Anyway we both enjoyed cooking this.

 Coming to these recipe.This  is a quick one bowl cake.Anything lemony is refreshing so does this cake.Usually the cake taste best on the next day. I had  a piece when it just came out of the oven and it taste awesome!!i feel this cake taste delicious even while it is hot . When ever you feel like having something truly refreshing try this out .You can make this in a jiffy since it contains no fancy ingredients and no tedious work.Here goes the recipe…

Ingredients

1.      Maida-1 cup
2.      Sugar-less than ¾ cup
3.      Oil-1/4 cup(use any unflavoured oil)
4.      Baking powder-1/2tsp
5.      Baking soda-1/2tsp
6.      Milk-3/4 cup
7.      Lemon juice-1tbsp
8.      Lemon zest- zest of two small lemons (it was around 1 tbsp or more)
9.      Lemon yellow color-tad a bit (it is purely optional)

Method of preparation

1.      Preheat oven at 180degree for 10 minutes.
2.      Take a bowl.mix all ingredients except flour  and stir till the sugar dissolves.
3.      Add the flour in  two batches and give a nice stir without any lumps.
4.      Pour in to muffin cups or greased muffin tray and bake for 30 minutes at 180degree or till the inserted knife comes out clean.

PARIPPU PAYASAM



Ingredients

1.      Cherupayar parippu( moong dal)-200gm
2.      Jaggery-400gm
3.      Thick coconut milk-1 cup
4.      Thin coconut milk-4 cups
5.      Ghee-4tbsp
6.      Cardamom -4nos
7.      Chukku podi (dry ginger powder)-1/4tsp(optional)
8.      Sugar-1tbsp
9.      Cashew nuts and raisins-a few
10.  Thenga kothu(coconut pieces)-1tbsp

Method of preparation

1.      Fry dal till light brown without adding any oil. Once it has cooled ,wash it and cook in a pressure cooker by adding 1 cup of water till it becomes soft
2.      Mean while, remove the skin of cardamom ,take out the seeds and powder it in a mixie by adding sugar.(addition of sugar helps in  getting fine powder)
3.      Grate jaggery. Melt this in a Uruli or thick bottomed vessel. Add little water while it is melting. Add cooked dal .Mix well. Add 2tbsp of ghee into this. Stir well. When the dal and jaggery combined well, add thin coconut milk. Bring it to boil.  Stir in between. Once the payasam thickens, add thick coconut milk, powdered cardamom and chukku.Heat for a while. Do not let it boil.
4.      Heat remaining ghee in another pan. Add the coconut pieces and cashew .Once it slightly browned add the raisins. Fry till the raisins puffed up, and the cashew –coconut pieces turned brown. Pour this over the prepared payasam…
 Enjoy the delicious parippu payasam…

Notes: If the payasam is too thin, add a tbsp of corn flour or rice flour dissolved in little water .Then boil the payasam for sometime.
